She can tell how a persons muscles move while connected to the ground, pretty much anticipating their attacks and knowing how projectiles are thrown at her, that's the seismic view she gets of people touching the ground.

She can't see things that aren't touching the ground (though she could see something touching something else that is touchinng the ground, such as a rope tied to the ceiling or a tree) But she is really good at working out trajectory, so she can react to projectiles if she saw them being fired (like that rock she caught), however, Aang can change his natural trajectory due to his air bending so she struggles to react to him when he's not touching the floor.

I think she could only see those projectiles mid air because they were earth.

A few things to note, Toph can only "see" arial attacks when the opponent touches the ground for earth bending right before they attack. Also Toph isn't at the level of Bumi when it comes to Earth bending. Bumi is over a hundred years old, a king, most likely fought in many wars and he himself said he's the strongest Earth bender you'll ever meet when Aang picked him for the third challenge.

Also before anyone else mentions it; since the whole Earth Tournament is a parody of WWE wrestling with the stage names and the like; "The Boulder" was designed to be a parody of Dwayne "The Rock" Johnson, and they even actually tried to get him into voice the character, but for one reason or another they weren't able to get him in at the right time, so they ended up hiring a different pro-wrestler instead.

Yeah; the last episode was goofyness for the sake of goofyness after the whole mood behind the Swamp episode. Only thing that really came from it is Zuko splitting from Iroh. With the introduction of Toph though? This is where the show truly finds its groove. It's going to be nothing but hard-hitting eps for a *long* while yet, so buckle up~ (And the reason the kid didn't know the family had a daughter? It's because the family never let anybody know they even had a child. They were too scared/embarrassed that Toph was born blind that they never let anyone outside the estate know about her existence.)
