For the info (i know it's impossible to keep up with all the names) The knight that Jaime praised as a painter when he was young is actually in the series and you already saw him. Barristen Selmy was the chief of the kingsguard that Cercei and Joffrey fired after Robert's death. In a scene with Robert you could see that Jaime still very much admires him as a fighter , and Ned told him he was very glad he never faced him in battle
