If the customer is asking you to remain open past standard business hours, it needs to be for a real emergency. Whomever is answering the phone needs to know which reasons are and are not worth staying open for. Also, if a customer shows up five minutes after closing to purchase a $1 treat, no big deal. Keeping staff an hour late is another issue.
