Full Plate on a Monk build

So how well did it work? I go through the build, the math, and the conclusions.

Maybe the best armored monk is 9STR,14DEX,16CON,13WIS,8INT,16CHA mountain dwarf Hexblade/Monk. You only have to boost CHA, you cannot really fall below baseline. You have 18 AC with scale mail and shield. You use your Ki for patient defense and step of the wind until you use it for focused aim. At 8 with Monk 5/Hexblade 4 you’ve pick up GWM and a Glaive improved pact weapon. You can swap your dwarven armor proficiencies for any martial weapon proficiencies you would want.

Just do a headbutt or kick instead. Unarmed strikes allows for all of those. “ Instead of using a weapon to make a melee weapon Attack, you can use an Unarmed Strike: a punch, kick, head-butt, or similar forceful blow (none of which count as weapons).”

I don't know the particular RAW rules in this case, and had difficulty finding them (at the table it's usually DM's discretion) ... If I'm wielding a 2-handed weapon, what are the limitations on using a hand to act further (I just used both hands in my first action)? It feels strange to swing both hands in attacking with my maul, then punch/ki-yah with a hand. Clearly I'm not dropping my maul (though in a strength character, perhaps one hand is enough to hold the maul). Am I just questioning RAW? (Again, I'm not finding the right rules reference)
