good points, you mentioned.
In my opinion the only real issue is, that Psychic Blades can't be used with any reaction-attack (opportunity attack or one granted by a feat like Mage Slayer). For this reason, a cunning Soulknife Rogue might carry a bunch of daggers from wich it draws 1 at the end of it's turns. And then drops it at the beginning of it's next turn (if he/she wants to do a bonus action attack). This indeed is kinda silly. The problem i see is that you do need 2 free hands to do 2 attacks with the Soul Blades on your turn - otherwise you could always wield a (parrying) dagger in your off-hand and would be good to go.
The other "complications" you mentioned i don't see as a drawback.
First: Psychic Blades does work with Paladin's Smite Spells, as those require "to hit with a (meele) weapon attack" wich the Soul Balde can. (These Spells don't imbue your weapon, but yourself)
Second: Even if you could manifest your Soul Blades whenever you like, you could not use it in combination with spells that require a Weapon that is at least 1 Sp woth as material component - you DM might allow it, but RAW a Soul Blade has no monetary value.
Third: Not allowing too many multiclass-shenanigans is probalby a good thing. (Look at 4th Edition exploiting guides and following errata if you need an example where those things got overboard).

Psychic Blades as published (verses the UA) has multiple issues that complicate its use for gameplay because the blades only manifest when you take the Attack action as opposed to when you make a weapon attack. Thus, the blades cannot be used to make attacks of opportunity; they cannot be used with spells that require a material component worth 1sp, like booming blade or steel wind strike; they can’t be used with the smite spells; and they cannot be used with other features such as the Hexblade warlock’s hex weapon or the pact of the blade’s pact weapon.
