I always believed that the reason Banner is kind of emotionless in this movie is because he spent literal YEARS suppressing his every emotion in fear that it might manifest the hulk. Bro is literally afraid to show any emotion whatsoever so that the green guy stays in his cage

(also because none of the MCU films actually answer it, this is all comic stuff and its not a spoiler just some character background) The reason why bruce and the hulk are seemingly different people is because bruce developed a personality disorder due to the abuse he was put through as a child and the hulk personality sorta manifested when he was put through gama radiation and turned into that. That's why sometimes the hulk will say demeaning things about "puny bruce", because the hulk is supposed to be strong for both of them and he doesn't like to feel weak. Also the hulk (in the comics at least) isn't actually stupid, he has the same level of intelligence as bruce but he has the mental capacity of a child so it doesn't really show. TL;DR: the hulk is a personality created by the abuse he faced as a child and it manifested when he took on that form, if he didn't have any severe trauma "the hulk" would just be bruce in that body.
