They also did not explain this well in the anime, but Gluttony is a Unique Skill that is the evolved version of Predator. Rimuru got it by combining Starved that he got from the Orc Disaster and Predator. And in the manga and LN, Rimuru did try to use Gluttony on Charybdis itself but it didn't work.
