I made the cake for Mother's Day weekend and I'm curious...I think the cake needs to actually cool in the oven, so bake for 35 minutes, then turn off the oven and wait for everything to come to room temp (Like you would a cheesecake).. When I baked this cake, at 35 minutes, mine was still liquid in the center at 35 minutes. I ended up baking 3 cakes of this, I made cake pops for my son's 3rd grade class (added mini choco chips & dipped in vanilla candy coating with sprinkles). So the cakes I made, I ended up cooking for 45 minutes on 350. No matter what I did, they deflated, so this is why I'm thinking it has to actually cool in the oven. Sorry for the ramble - the cake recipe itself is DIVINE...amazing how butter, fat, and sugar do such magical things..lol Thank you so very much for sharing the recipe, Christine!

I love this! My kids and I began the process of going vegan about 6 months ago. The hardest part is definitely the beginning since you have to relearn how to cook and bake without eggs and dairy. I think in this case it's not an all-or-nothing black and white situation. My aunt has chickens, we eat their eggs when we are visiting/nearby, and in general my immediate family gets our eggs locally from a farm which isn't engaging in that kind of behavior- so while many factory farms' eggs aren't produced humanely, it's okay IMO to do some research and find a humane place to source eggs. We are carnivores/omnivores in general and there are some things we can only get from non-vegan sources. I also have IBS and cannot eat a lot of fruits and veggies!! I feel like if you can buy locally from a farm that is engaging in humane practices, I see no issue in getting eggs. Just as your fruits and veggies (and chocolate) ideally shouldn't be coming from large companies that engage in inhumane labor practices/environmentally destructive farming practices, either (see: oat products., avocados, quinoa). I fully respect & support people wanting to do the best thing they can and not wanting to participate in factory farming!!

Hi Cora I was curious about this too. The issue with buying eggs has to do with male chics being culled. Every year in the US 300 million male chicks are killed at hatcheries that solely raise chicken breeds for egg production. Hatcheries cannot tell if a fertile egg is carrying a male or female chicken. Once the egg hatches and they find that it is a male they get ride of them. I get the plant based diet because I eat primarily plant based. However chickens will lay eggs regardless if you eat them or not. So why not use then in baking? It doesn’t hurt the chicken. I guess I have a different outlook because I have my own chickens. And they just lay eggs, so I get them. Also another alternative is using plant based butter and egg substitute, or apple sauce. Those work great when I bake vegan

Vanilla Marshmallow Cake Ingredients: 3/4 Cup Soft Miyoko's Butter 1 Cup Cane Sugar 1 Tbsp Vanilla 1 1/4 Cups Soy Milk 1 Tbsp Apple Cider Vinegar 2 1/4 Cups and All Purpose Flour 4 1/2 Tsp Baking Powder 1/2 Tsp Salt 2 cups Dandies Mini Marshmallows 1/8 cup Butter 1/2 Heavy Coconut Cream 350 Degrees for 35 minutes (Don't open oven before hand) Preheat oven to 350 degrees Prepare your pan as shown in tutorial In a stand mixer (or large bowl using a hand mixer), combine 3/4 cup soft Butter, 1 cup Sugar, 1 tbsp Vanilla. Cream together set aside. In a glass bowl mix 1 and 1/4 cups Soy Milk and 1 tbsp Apple Cider Vinegar. Whisk together and set aside. This creates a plant based version of buttermilk. In a saucepan combine 1/8 cup Plant based butter, 1/2 cup Coconut Cream (The solid part at the top of the can) and 2 cups Dandies miniature Marshmallows. mix together and set aside In a large metal bowl with a sifter placed on top add 2 1/4 cups all purpose Flour, 4 and 1/2 tsp Baking Powder, and 1/2 tsp Salt. Sift together and then whisk to full combine Heat saucepan with marshmallows on stove with medium heat mixing constantly until marshmallows are nearly dissolved. Then pour marshmallow mixture into your stand mixer with your butter and sugar. Mix thoroughly. Remove bowl from stand mixer. In quick succession, add half buttermilk mixture and half flour mixture into the bowl you removed from the stand mixer. Mix quickly. Then add the remainder of the buttermilk and flour. Mix quickly and scoop into the prepared pan. Smooth top with a spatula and place on middle rack of 350 degree oven (Do this quickly so less heat escapes the oven). Bake for 35 minutes and do not open the oven before the time is up (it will cause the cake to deflate) Once time is up, remove the cake from the oven and allow it to rest for 15 minutes. After that time, you can release it from the springform pan. If you plan to create a sculptural cake with this, chill it in the fridge before cutting and stacking. If you've made this as a dessert for the same day, slather with buttercream and serve warm (It will taste incredible) Buttercream Frosting 1 cup Miyoko's butter - One box (cool room temp) 3 cups confectioners sugar 2 tsp Vanilla 1/2 tsp Salt In a stand mixer or large bowl with hand mixer, cream butter. Add one cup of confectioners sugar (powdered sugar) at a time and mix thoroughly before adding the next cup. Add 2 tsp Vanilla and 1/2 tsp salt. Beat together until fluffy then slather on cake, fill a pastry bag or chill until ready to use.

I loved the comment about the 70s stove! Like you I am super interested in having an awesome kitchen. I couldn't find anyone willing to make the cabinets like I wanted for my kitchen, so I'm building them myself with all the details befitting of a 1912 bungalow. When I'm finished, it will look like it is original to the house. That said, there is a cabinet shop not far from you (about 2-1/2 hours in Claremont, NH) that has some incredible craftsmanship the likes of which is rare these days. You might give them a look. Does this white one mean your new kitchen will be white or is it just that white goes with everything. For some reason I felt your kitchen would somehow go with the dining room in a green shade with pink accents. Time will tell. That cake looked fabulous. Look up some of her demo videos for her birthday cake recipe. She also uses a sheet of some kind of clear plastic inside the ring as she builds up the cake to keep it together as she does the inside work and then peels it off after she chills the cake. Hi Luke, this recipe is pretty soft and fluffy but I also haven’t tried stacking and frosting this one and I have only worked with fondant once many years ago. I think you would need a recipe that is more dense and structural.

Hi Christine! Thank you for all your efforts! The cake looks great! I can't wait for the second video! I have been plant based since 2010. We don't eat many sweets but on special occasions I will make a cake or brownies. My blueberry lemon muffins are very popular with my AirBnB guest. They cook up high and light. I always double sift. I use ground flax seed and and water as a binder and a combo of baking powder and baking soda eith almond milk soured with lemon juice. Ground flax seed works great as an egg replacement for many things like cakes, muffins, pancakes, etc. I was watching the beginning of your video when you were assembling your first trial cake... I saw you pouring off the liquid from a can of chickpeas (which is known as "aquafaba") but I think you may have missed an important step which may be why the cake failed... Aquafina needs to be beaten to soft peaks like meringue. Creme of tartar may be used to help set the peaks. In a stand mixer start the Aquafina on low speed then increase to med high when it begins to froth. It takes some time to coalesce but eventually it will fir lovely high sift peaks. At this point you put the other ingredients together mixing just enough to make a loose batter but not enough to stimulate the gluten and make the cake tough. Then right before you are ready to bake, gently fold in the peaked aquafaba just enough to combine. Bake according to recipe directions and the cake should come out high and ever so tender. I hope this helps!

I have an amazing vegan chocolate cake that is super easy. I have never tried layering it for decorating, only used it as a sheet cake and cupcakes. 3 cups flour 2 cups sugar 2 tsp baking soda 6 Tbls cocoa powder 1 tsp salt 2/3 cup oil 2 Tbls vinegar 2 tsp vanilla 2 cups water Put all ingredients in a bowl and mix until smooth. Pour into a greased and floured 9 x 13 pan (or for cupcakes just us the liners) and bake at 350 for 40 minutes for the big cake, 15 to 20 minutes for cupcakes. I don’t even get out my mixer for this one. It’s so forgiving and turns out great. And a very fudgie frosting that can also be handmixed is: 2/3 cup cocoa powder 1 stick (4 oz) vegan butter 3 cups powdered sugar 1/3 cup vegan milk 1 tsp vanilla Melt butter in a pan, add cocoa powder and vanilla and mix well. Alternately add sugar and milk, may need a splash or two more until you like the consistency.

My daughter has a rare metabolic disorder called Phenylketonuria which basically means her body doesn't process protein properly and she has to remain on a super strict vegan diet for the rest of her life (and by super strict she can't eat regular pastas/ breads/ flour etc). I used to love watching all the wonderful baking but it would really get me down thinking how hard it would be for me to adapt it for my little girl to enjoy, so I cannot put into words how much I appreciate this plant based tutorial. I read this on whatsugar.com. Domino sugar with lot numbers that begin with 1 or 4 are vegan. 1 is produced in Yonkers, NY and 4 in Baltimore, MD. I never knew about sugar being processed with bone char. Lot number 5 is not vegan.

When I went plant-based, I had a similar adventure with baking. Like you, I figured out my recipe by starting with something that looked good. It just happened to be cornbread! I subbed almond flour for the cornmeal, added lemon zest and lemon juice, a little bit more sugar and poppy seeds. Your cake looks great.

My mom would use heavy cardboard for cake board. She would cut the size she needed then cover it with heavy duty foil. If you have a cutting board that is the right size, you can wrap that in foil as well.

I was so thrilled to see a vegan recipe and your beautiful words about being kind to animals!!! I recently tried the recipe from the channel "It Doesn't Taste Like Chicken" her Vanilla cake is so moist and fresh. The secret (as I'm sure you already know) is not to overmix. Lumps are ok for the oven and make it fluffier. I use it to make vegan tiramisu! (for non-dairy whipped cream, kosher grocery sections are your best friend!) Cheers!

Why go out of the way for the marshmallows tho? You could make your own without the animal-based gelatin. I've done gluten-free recipes for diabetics in my family, I haven't tried the vegetarian or vegan. I love butter, cream and cheese. Don't think I could give those up, but on the other hand, my heart would probably appreciate it.

This is my go to vegan sponge recipe. Vanilla sponge cup cakes (obviously this recipe can be turned into Victoria sponge cake)                                                                                                                                                       400g self raising flour 140g caster sugar 2 tsp baking powder 400 ml Vegan Milk (I like almond breeze) 160ml rapeseed oil 2 Tablespoons of vanilla extract   So, mix all the dry ingredients together in a bowl and all the wet ingredients in a jug then add the wet to the dry and mix with a wooden spoon to only just mixed. Leave the lumps. If you over mix and try and get out all the lumps, it will not rise in the oven Use an icecream scoop and put one scoop in each muffin case and put in the oven Gas mark 5 or about 200 c for about 15 minutes until brown. The freeze really well

You don’t need to cut up towels you can buy them on Amazon they’re called cake bands. You soak them and wrap around your cake. Xx

Chill the cake first, in the fridge or freezer for few minutes. That should help, also youtube tutorials for icing cakes, you can always learn something new.

Is there a trick to crumb coating?Every time I make a layer cake and try to spread frosting for a crumb coat, I get a big chunk of frosting that peels off with cake stuck to it. So I have a spatula with a bunch frosting with crumbs and a big open spot of cake to cover. I can't figure out what I'm doing wrong.

I am always happy to see failed experiments! My vegan baking experience was a failure but I did learn to incorporate many things... vegan butter is amazing. I dont eat butter. I couldnt replace eggs or real cream. My trade off was to only purchase ethically farm raised animal based products. I pay double the price but it doesnt weigh on my conscious! I did purchase Dandies marshmallows this winter and I do have to say that I threw them out. They were awful!

Thank you for making this plant based recipe seem so accessible. I have a severe nut allergy and while I limit animal products in my diet, going completely plant based has always seems so intimidating! This looked about as easy as a standard homemade cake and also nut free!

The look of trying to be polite but you’re annoyed and disappointed when you taste the cake is legit. I feel for you! It’s a long road. I don’t know if this tip will be helpful but the pastry chef from New York, Christina Tosi, makes all her layer cake in big sheet pans and then cuts out the circles with rings and then the scraps get jammed into a ring for the bottom layer that no one sees. Might be a little easier than lining several spring form pans

Almond milk tends to be a thinner consistency than soy and I'd worry that it would affect the texture of the cake. Ripple is a pea protein milk that I like in my chai lattes. It's has a similar consistency to soy and might be a good substitute.

I'd love to see a picture of the cake in the refrigerator! I think I'd need a separate walk-in. I love the 1970s stovetop, it makes me feel less bad about my 1980s gross stovetop. Not sure you are aware, but many sugars aren't vegan; they use bone char to make it "whiter." You can search for vegan sugar (I was shocked when I learned this is a thing!), I like Wholesome Organic, but I'm sure there are plenty other brands.

Non-dairy milks are usually pretty interchangeable in recipes. I find oat milk usually works best :)

Recently went plant-based myself. This is absolutely brilliant. There are insulating “cake bands” that you can buy, but this homemade version is genius. Can’t wait to see the decorating episode. And thank you for showing the train wreck attempt. It’s important to see the experiments that don’t turn out. Baking is a fickle mistress and too many times people get discouraged and avoid it. Yum, I'm going to try it. We are partially plant based anyway, but I haven't found any good baking substitute recipes, they're usually very chalky, or use maple syrup which just has such an over powering flavor, etc. I had two birthdays to bake for this month choc full of dairy lol a strawberry icecream cake, and a German chocolate, I'm going to try and create dairy free versions for next year since they ask for the same every year lol
