I'm a new member and just catching up. You are such an amazingly talented artist, so inventive! I just wanted to tell you, that I believe it's entirely possible to whip the top, fat part of the coconut cream in the can, i to whipped topping. You were hoping for some topping for your pie although I bet it was spectacular just by itself!

I feel the same way about animals. I’ve given up eggs, meat and milk. I researched the way animals are treated too. It’s all on YouTube and it’s horrible. 😢😢😢 Now I can eat without guilt.

You could also use a 1/4 measuring cup 3 times to get 3/4 cups of something.

Plant based doesn't neccesarily mean Vegan. Some people who eat plant based still use Honey. There is a distinction between vegan and plant based.

Hi Christine, hi and everyone! So yeah, using honey would make this not plant-based anymore (as it's not vegan) so I was thinking another option could be Olive oil. My mother recommended it to me to top bread buns before getting them into the oven and it worked quite nicely to give them a golden finish. I added a little bit of salt for some extra flavor so I think you can do the same with a little bit of sugar for a sweet recipe. Hope everyone's doing fine!

I love everything you do. A vegan apple pie? As even you were surprised how good it turned out, I wonder how it sitting overnight in the fridge affected things. Maybe a thought for further experimentation. I often have cold oats as my first meal of the day and they have to usually soak a whole night to be soft and edible. Like tomato sauces that are cooked chilled and reheated taste 10 times better. That much time sitting might of let some chemistry happen.

Amazing pie!!! And I want to go back in time and give you a hug when your pie didn't win. I thought it was pretty. Also - some people are commenting on honey not being plant based, but if you buy local honey from people who love their bees and harvest it in careful amounts, it won't hurt the bees. (and Youtube is way better than Vimeo) Thank you for the inspiration!!!

I wanted to throw out the book Sweet Laurel for interesting plant based options. Came here to say this - both red and golden delicious are just mealy mush in pies. I do love a Braeburn! If you can find them, York's are lovely! very crispy even after baking and have a natural "spicy" flavor even when raw.

I am so glad you are doing dairy free recipes! I have a mild allergy to dairy so I always have to convert regular recipes to dairy-free if I plan on eating them. Been in quarantine with my parents, so this will be a nice surprise for them! The perks of living in an Italian household is we rarely run out of supplies for cooking and baking!
