I appreciate your observation that the absent male role model is Hank Summers and not Giles. I get why Giles gets so offended, but Professor Walsh was detecting something important in Buffy that I think Giles was a little too offended to consider. Her abandonment issues start with her father and continued with Angel and even Parker for a bit. Buffy WAS forced to take on adult roles too early, and although that is not Giles the person's fault, Giles the watcher sorta represents those adult roles (i.e., being the Slayer) in Buffy's life.
