yea I see the bear ending with him having built a great restaurant with a great team. A well oiled machine that doesn't need him to function, allowing him to explore things, outside of the food industry, like becoming an artist.

I think he just wanted to be a chef cause Mikey had a restaurant and he wanted to be closer to him. Remember his driving force was spite cause Mikey wouldn't let him work at the restaurant. Then Mikey died and now Carm lost his reason. Also I think at one point talking to Claire he tells her he wanted to be an artist.
