Why would they think to protect their food source when the monsters have never touched it? this isnt assumption btw they have Victor as hard evidence. "But the crops were poisoned" correct for a couple days at least and every night since then they didnt touch the animals. In conclusion, it is completely reasonable to assume they would not lure them with the animals, slaughter one, stay in the barn and hide until 1 specific man comes there to save the animals in hopes of him bringing another resident so they can try to break him. I'd be more on your side if they found out about the poisoned soil that morning then during the night they let the animals out but it's been days unless I'm misremembering.
