Clone Wars Spoilers - Not to go into too much detail on the subject. The reason Ahsoka left the Jedi order was because they accused her of a crime she did not commit. The order was fooled into thinking she killed a Jedi Master. I believe (it's been a while} Anakin cleared her name but by that time the damage was already done and Ahsoka lost faith in the Jedi order and didn't believe they were going in the right direction according to what a Jedi is supposed to be. Anakin wanted her to stay but she walked away. If you watch the Clone Wars, Anakin and Ahsoka have several discussions about the Jedi order and the part they played in the war, she basically didn't agree with it. Dang kinda went into too much detail.

Yeah, you guys are missing multiple seasons worth of context and major plotpoints. They're trying to onboard you, but either watching Clone Wars + Rebels or a recap of both will be beneficial. It's like hopping into Game of Thrones in Season 3, and not seeing a White Walker or seeing what happened to the Starks initially, while they're referencing dead characters with obvious importance.
