Ghouls are born that way. So yes that's why Touka was asking what cake tastes like etc. And with that known, all the ghouls of the 20th ward (place we are in) will have grown up knowing of each others presence, so will in turn know of each other enough to put things together with names etc. Probably a bunch of people in your town who you don't really know, but know enough from stories and shit. Another thing, unsure if you picked up on the name 'Kagune' being mentioned but that is the tentacles they have, each is different so that's why he could easily pick up on it being Rize's (not from it being red like you mentioned, but from it being the same design wise); I saw booler in a separate comment use the word "inherited" and that's the best way to put it, he got Rize's organs and in turn got her Kagune also. As for the tentacles that each ghoul has it's called a "kagune" and looks unique to each ghoul (hence Kaneki "inheriting" Rize's through the organ transplant) As for the recap discussions, I'd say they're probably not essential for this series but we eatin either way LFGGGG
