Fern is a prodigy but she's also been training with Heiter since she was a small child, and then with Frieren for close to 10 years at this point. She has a natural talent for mana control (even Frieren had trouble detecting her when they first met) and Frieren has taught her how to suppress her mana constantly, so she has a knack for sensing the fluctuations that come with suppression. Despite Serie saying that constant suppression is an inefficient skill, she also constantly suppresses her mana. None of the first-class mages, not even Lernen who saw through Frieren's suppression at a glance, can tell that Serie's doing it. Serie's suppressed mana is equal to Frieren's unsuppressed mana that we saw against Aura (which is why Lernen said their mana is equal - he can't tell Serie is suppressing it). So Fern noticing Serie's suppression at a glance excited Serie because NO ONE else can tell - but it's not a huge surprise since Fern has been trained in that skill almost her entire life and learned it from someone who has 1,000 years of practice.
