I have come to the same conclusion as you have. Tallahassee's numbers have been dropping. I may start indoor seating when we hit the WHO guidelines, but I will still require masks off table.

No idea about the price, while I don't think I can make a panner that will last like a commercial one, I can make one that will tell me if I need one. Most of the parts will be here this week. I'm sure I can build something interesting that works with what I have.

I think you should still require masks, for the safety of your staff and customers and their families. tl;dr: unvaxed folks will lie and not wear one, some people can't get vaxxed yet, and fully vaccinated people can still get and transmit COVID. I'm now fully vaccinated, but I'm still wearing a mask to protect other people from the possibility that I may get and transmit the disease to them. Especially because I know people who have immune-compromised family (kidney transplant recipient). Also, my mom lives in a retirement community where all the staff and residents have been fully vaccinated since February, and yet they had 5 (five!) positive cases last week. The entire place had been locked down until April (no family visits at all), and once they relaxed their guard they got an outbreak. I think the CDC made a grave error last week, by relaxing the mask requirements too soon. They should have waited until vaccination numbers were higher and incidence rates were lower. Sadly, our state (Washington) has also relaxed mask requirements. And I just don't trust people who should still be wearing a mask to do so. If you've read this far, I suggest that you pledge to keep your mask requirement for at least 3 more weeks -- at which time we'll have data to know how un/masking will have affected the spread. I'm hoping that early June will not have another spike, but we'll see. Better to be safe at this point - because wearing a mask for another few weeks seems a small price to pay if it saves more people from this disease. thanks.

yeah, seems like you should be able to make your own panner. after all, it's basically just a large bowl/sphere with a motor to drive it. Pricing seems similar to ice cream makers, which are basically just a motor that drives the paddle - so why are they so dang expensive?
