I get that you want to watch the original after reboots- love it 🫶. Shame that you didn't want to watch select episodes from the 60s tv show (I completely understand reactors not wanting to watch whole seasons as it is from a different world so to speak), it would give you even more foundational perspective to both the early movies and the reboots. Not critical just a plus, like Popcorn in Bed did.

They new star trek movies are a reboot but -in an alternate timeline- You dont really NEED to watch the classic star trek movies to enjoy the new films, but watching them before hand does add extra layers to it. The new films are built as stand alone movies to draw in a broader and younger audience. Which worked because you are now watching the classics after having enjoyed the new movies. But yeah just know the new movies are an alternate reality to the classics.
