I've finally figured out where I remember Ioan Gruffudd (Reed Richards) from: the previous year's King Arthur (2004), where he portrayed the more charismatic Lancelot (alongside Clive Owen, Keira Knightley, Stellan Skarsgard, ...).* Not everybody appreciated the film's pseudo-"historically accurate" take, but I recommend it.
BTS trivia: "Ioan Gruffudd was spotted curling his eyelashes by Ray Winstone one morning before shooting. Winstone spread the word, and Gruffudd earned the nickname 'Sir Lashalot' for the duration of the shoot."
* With a score by Hans Zimmer, natch.

In the end you said "why would they choose chris evens when hes in the same universe as cap" In fact, its not the same universe. The MCU is a completely self contained universe from the rest of marvels non MCU productions like Xmen. Xmen is also not in the same universe as the MCU, nor is Blade or Fantastic 4. MCU is completely separate timeline from everything else.

Would love what to see you think of X-men 97 show its only 10 episodes and does X men really well especially Rogue she's a better character than what the movies gave her. Its a sequel to the 90's animated series but you could jsut watch a recap of that before 97 if you want more context. And I enjoy this movie a lot and the Fantastic 4 along with Spiderman were some of the first superheroes that Stan Lee made, the Fantastic 4 were Marvels first family team before the Avengers were a thing

For context on the confusion, by the time this movie was released, the film rights for the Fantastic Four & X-Men were owned by Fox and was released three years before the MCU was created which is why none of these IPs haven’t appeared in the MCU yet, why Chris Evans was Johnny, & why this movie and it’s sequel isn’t connected to the MCU. Marvel/Disney was able to get the rights to these characters & the X-Men back in 2019 so now we are getting a reboot of the Fantastic Four in the MCU but will be released next year. :) You might be surprised but Doctor Doom is actually widely considered to be the main villain of Marvel Comics even more dangerous than Thanos & was a inspiration for the creation of Darth Vader. So far, we haven’t got a great adaptation of him on the big screen but he was still fun in this movie.

Fantastic Four, Assemble! :-)
Just like the X-Men, the Fantastic Four are Marvel Comics characters, but are not part of the MCU. So in the comics, they and the Avengers are all in the same universe and occasionally interact, but in the movies, they're completely separate. (Ditto for the pre- Tom Holland Spider-Men.) This is solely due to business reasons.

Upon reflection, it's a good thing they didn't keep the original line* of: "Get your tongue out of my nostril, pervert!"

Particularly Chris Evans. :-P
