This is Goku's first fight as a SS3 in a living body, which means his stamina drops more rapidly than it did when he used it against fat Buu.

What is BS about all this is that while Buu was having the time of his life, they could have learned the fusion dance and become Gogeta, who could've one-shotted Buu. My two cents.

If they kept bantering like that while Buu was emoting and belly dancing, he would've been on standby and the plot would've given Goku more than enough time XD Or, K Kai could make himself useful and teleport Goku to be healed by Dende, then bring him back. Maybe throw in a Solar Flare at Buu beforehand?
I know people like to say Videl vs Spopovich is "the most brutal beat down in anime history," but I think Vegeta getting the bricks beat out of him and Kid Buu's foot being indented through his freaking spine is far worse. And considering what's at stake, there's no margin for error.
Being in a dead body affords Vegeta better durability and stamina. Heck, I'd say in general he has more durability than everyone else. He's known to remain in his heightened state longer. He had an actual fight with 18, while Future Trunks got blindside one-shotted by 17. Then again, I suppose sneak attacks do more damage and 17 decided to not f*ck around as much.
And maybe Goku should regain his power in base and then transform vs the power he outputs and loses trying to maintain SSJ3 constantly? His state of mind also isn't calm. Just my two cents.
