(No Spoilers. All of this has been said or suggested in the show) They dont need Omega because she's force sensitive. They need her because she is a blank slate for replication--a walking stem cell. She is a Gen 1 clone (along with Boba), and because of that, her DNA is nearly pristine, compared to all the other clones they were testing. That's why she is the other piece of the puzzle like Hemlock said. Her blood combined with the blood of the force sensitive children has shown an almost perfect combination, able to nearly replicate the force sensitivity with zero degradation. It's what eventually leads to Gideon's secret project in Mandalorian and then the return of Palpatine, somehow.
