That's a good interpretation for sure. Another good one is that the ice cream represents money/power, while the cone represents a climb toward success. We see a singular ant making it to the top of the cone. That symbolizes what Jimmy envisions for Saul: sitting on the 50th floor (as he told the wannabe lawyer Kristy), looking down at the Howards and Chucks of this world, being the "winner" that took it all. Then, there are the red ants. Keep in mind that in both BB and BCS the choice of colors tends to be very important. In these shows, red is almost always associated with crime/the underworld. Therefore, all these ants are stand-ins for criminals that are hungry for money and power. When Jimmy is driven back to the spot where he dropped the ice cream, the cone (Saul's path to success and 'happiness') has been destroyed by the red ants, and only a big mess remains. This foreshadows what eventually happens to Saul down the road in BB.
