Tonight's pour is Oregon spirit - (Thank you to a special friend that always keeps me well stocked in delicious and unique whiskeys.) That being said, this little whiskey is produced by a small group in Bend, Oregon that have been around since 2009, and consider themselves “spirit geeks.”
It is a four grain bourbon made with corn, rye, wheat, and malted barley, according to their site. This whiskey is made and aged for four years on site. After four years of maturation in new American white oak barrels, the barrels are married and a touch of water is added to bring our whiskey to 94 proof.
For me, it started out light, but then the spices took over and I could really taste the long smokey finish that has a bit of bite. I preferred it with just a bit of water to mellow it some. This would definitely be a great whiskey for cocktails and they have a few recipes on their website.
It's always interesting to try these newer whiskies and how distillers are trying different approaches.
As things cool off here in the valley, it's a great one for the season.
