This week's photos are a few firsts from my photo shoot last week at the Palazzo Executive Suite. I'll share more about it later, because today I am sharing Pearse Coopers Select Irish Whiskey. If you've been a Patreon since last year or you've gone back through my content, you may remember I reviewed the Pearse Lyons Fouders Choice and mentioned that the distillery is located inside a restored church. The copper pot stills against the stained glass church windows are just beautiful. I would definitely love to see it in person some day!
The Cooper's Select was crafted using a blend of malt and grain Irish whiskies that were matured in ex-bourbon casks for over 4 years and then vatted together for at least another 4 years in first-fill Oloroso sherry butts. The name is in tribute to the vital job coopers do, and the influence that wood has on a whiskey. Pearse Lyons was especially appreciative of the role of a cooper as his family on his mother’s side, the Dunnes, were a family of Coopers for generations. One of them, Margaret Dunne, was actually the first female cooper in Ireland!
I enjoyed this one very much and I think I am coming to the conclusion that I really enjoy the blends, especially the ones that are finished in ex-bourbon and wine casks. Must be my sweet tooth showing itself!

Notes from Master of Malt:
Nose: Rich and refined, hazelnut buttercream, flamed orange peel and traditionally Sherry notes of raisins, dates and figs initially. A hint of toasted oak and star anise linger underneath.
Palate: Milky coffee and dark chocolate lead with plenty of juicy citrus, dark fruits and gingerbread.
Finish: Sweet pineapple lingers alongside a touch of vanilla.
