Knockmore, is the name of a jagged mountain on Clare Island off the coast of Ireland. An old lighthouse has been there since the early 1800s and lore has it that the original lighthouse keeper lived alone there, except for the company of his Irish Wolfhound. To keep himself busy and warm, he blended whiskey that arrived by ship. He experimented and kept notes until he found the perfect blend. He named his vanilla sweet Whiskey after the mountain on his island and his faithful companion that shared that same name.
It goes down smooth an easy. Sometimes, on a hot night like tonight, I like to take an ice cube and just dip it in the glass and taste it off the cube....So refreshing!
This whiskey is a blending of aged single malts with 8-10 year grain and malt whiskeys and aged in flame-charred bourbon casks.
