The other day, I went to help a friend of mine harvesting ume (Japanese apricot) fruit.

The garden of a house in a very peaceful neighborhood. We only had to harvest from one plum tree planted there, but it was a very large tree with a lot of fruit, so harvesting was hard work. However, it was my first experience and I enjoyed it very much.
Ume fruit is a very familiar fruit to Japanese people. Pickled plums, pickled in salt, are an indispensable taste for Japanese people. This time we harvested the fruit for making fruit wine, which is also very tasty.

This is Umeboshi (pickled plum).
However, when I looked it up, I found that the plum fruit is not familiar to the rest of the world. It is a fruit similar to apricot, but it is rarely eaten raw and is used as an ingredient for making pickles and fruit wine. Pickles, in particular, are very acidic, but they are best when eaten with white rice.
Therefore, when Japanese people see pickled plums, they conditionally secrete a lot of saliva. Probably many people salivate when they see a lemon, but it is the same phenomenon.
My friend is going to make a fruit wine with craft gin brewed by Suntory in Japan, and I am very much looking forward to the finished product.
