The other day, I had another local dish from my area.
This is a local dish called "miso nikomi udon"
It is a meal made by simmering udon noodles, which are made by kneading wheat with water, in a very strong-tasting miso paste.
In Nagoya City, where we live, there are many dishes made with miso called hatcho miso, which has a stronger flavor than regular miso, and this is one of them.
Since it is a very hot meal, it is considered polite to use the lid of an earthenware pot instead of a plate to cool it down before eating. A bit unusual, isn't it?
In this day and age when there are so many places to eat, I feel that, on the contrary, there are fewer opportunities to eat local cuisine that is rooted in the region, so I would like to make a conscious effort to eat more local cuisine.
