The actor playing Geralt (Henry Cavill) is a huge fan of The Witcher games so only wanted to take this role if they treated the source material with proper respect. The fights are a huge part of it and he goes above and beyond to make sure the fights are amazing!

Witchers are created through a three staged process, the first being The Trial of Grasses. The Trial of Grasses is a mutagenic process that changes skeletal muscles, the nervous system, and the immune system. It is also very very painful and only 3 out of 10 children survive it. Witchers do some magic, though sorcerers would not consider it magic because it is pretty weak.
