Damon said he'd rather die than be human, he'd rather die right now than... that whole speech etc. Well, Elena finally decided she wouldn't rather die than be a vampire. Katherine was killing her and she chose to give up her chance to be human and live as a vampire. By happy coincidence it was also a punishment worse than death for Katherine...
