One of my favourite books as a kid was Ursula K. Le Guin’s A Wizard of Earthsea. In that the main character learnt to transform himself into a sparrow but there was a catch. If he spent too long in that form he would become a sparrow in mind as well as body and be unable to change back.
There was actually a scene where he had to fly a long distance and had lost most of his human mind by the time he got to his destination.
I think Elfman’s magic works in a similar way. He doesn’t just transform he also takes on some of the personality of what he transforms into.

Fairy Tail is actually so big on mysteries. They’ll be questions that will take like 50+ episodes to answer. You just gotta hold them in, or write them down.

As others have said, he absorbs the “soul” of the creature and can copy its attributes like power and appearance. This beast’s soul was too powerful for Elfman so rather than him controlling it, it controlled him.

Regarding Elfmans power.
(No spoilers)
I don't remember it being explained in detail at any point, so i'll just state my assumptions, how i always imagined it at this point.
Elfman has the "Beast" Take Over magic, when he gets into contact with a "beast", he can imprint its species (or maybe even seal the creature itself) into himself.
The exact condition/process is unknown, but in the flashback it seemed to me, that Elfman took on the form of the beast they were assigned to hunt, so i assume its more like a "seal" and he actually has that creature inside of him. But this part is just speculations.
Aftwards he can then either partially or fully transform himself into the imprinted beasts. However he (probably) has to have an "inner fight" to suppress its will, and the more parts he transforms, the more difficult it is to keep your own personality/will intact.

Take Over Magic is a higher level of Transformation Magic that gives them the abilities and looks of what they took over.

The Strauss siblings all have the same magic, but different attributes. Mira's magic is a spoiler you'll get to see what she can do eventually. Lisanna's magic is called Take Over: Animal Soul. And Elfman's magic is called Take Over: Beast Soul.
