If you think about it, Iron Man really didn't affect whether or not the team would come together. 4 was gonna come to Earth regardless. That had nothing to do with Tony. Captain America and captain Marvel were around before Tony. And it was captain Marvel that got the idea in Nick's head. And blackwidow and Hawkeye were going to be there already. And it was thanks to Captain America that we got Hulk.

Yes the ten rings are in Iron Man 1 and 3 (and you can even see the logo during the filming of the videos the terrorist make , as a backdrop) and they are mentioned in a few other movies up until now. The problem is that in order to properly notice them you need to see all the movies 3+ times so it's normal that you missed them but without spoilers... i'll just say it's not the last time you hear of them ;)
