With regards to Jacob touching the candidates - I think the Lighthouse episode reveals that Jacob was involved with all of them from a very young age - since Jack mentions Jacob was watching his childhood house. So the age of the candidates is possibly not as important as the episode makes it out to be. Perhaps Jacob only ever touched them once, but he may well have been present on many occasions in their lives. This isn't a spoiler, it's just how I was interpreting it at this point in the series when I watched it. The differences in the other world, are presumably tied to the ripple effects of the island no longer existing. Which, as you said, means that the 815ers journeys before boarding the flight were no longer destined to end up on the island this time around, so changes have occurred before AND after the day of the flight.
