This next arc of Bleach was not the end of the manga and so for years anime only fans were left without the real ending. Thousand Year Blood War animates the final arc of the manga, so what you're getting is a continuation and a final resolution to the Bleach story but animated with modern technique and pacing.

I watched up to wano arc anime and i love one piece overall, but would never recommend anime to anyone ever, pacing is tragic, bleach is super fast nearly perfectly paced compared to what one piece is doing sometimes, main fights last 10 eps spread and cut in 80 episodes, when there is main action in Bleach its 1-2 eps and we done.
New remake One Piece anime is the only option really or manga.

Its exactly as you said, if you watched it as teenager it was completely different experience, anime back then was different.
Also if you started watching anime with long series like Bleach your opinion might been different too.
The last arc is more modern, there are no retrospections (or very short ones) at the start so you can watch it normally with opening each time. Filler arc between is actual banger about civil war, you will get a opening in ep 342 check it out, and new one in 343 so watch both openings.
Tybw is everything you except, modern animation, fast pacing, answers banger fights can't wait.
Btw Aizen is fused with Hongyoku that means he's the only person that evolves and increase his power just by sitting on a chair in prison. He also never used his Bankai, only Shikai. Here is a 40 second meme no spoilers video check it out.

not sure why previous comment got deleted, but can't wait for you guys to start tybw. there is no fluff in it. as for One Piece, unfortunately it's even worse than Bleach at times. I think live action and waiting for THE One Piece (2024 new anime) might be the move. Even one pace doesn't fully fix things. Also modern anime very much overcorrects in terms of pacing by condensing things to the extreme, precisely as a response to that older anime being super slow.
