Hope you are feeling better. Thank you for soldiering on. That is a bravely and beautifully done restoration. I have one of those, also, and it is currently in the restoration/ refurb queue. Regrettably, your video helped me realize that mine has a replacement blade.I have seen Elia Bizzarri use one to smooth the rockers on a one of his Windsor rockers and Roy Underhill the wheel of his flywheel lathe. I have also heard it recommended to set the curve of the sole a bit tighter for convex and a bit flatter for concave curves in order to allow the iron a bit of extension below the sole.

I'm not sure, but I have my theories/hunches. I could be mistaken (do let me know if I am), but before the Stanley Rule & Level Co bought the patent rights to Leonard Baileys planes and started manufacturing them in 1867, Stanley wasn't producing any tools with japanning on them. I think they were experimenting with recipes, raw materials, what works, what doesn't, etc etc. I also think being frugal may have been a reason for it as well.

Early Stanley japanning can be thin, in general, its thinner than later Stanley planes (say, a type 11 for example), but there is some variation between them. My 1874 type 4 No.7 has paper thin japanning, my 1869 type 2 No. 4 is also really thin, but somewhat thicker than the No. 7.

Hey, glad to see you're back and your health is improving. Been looking for this exact plane for my shop. Found one last week at an antique shop in Santa Rosa but it was so busted up and abused that the $110 price tag wasn't justified and I left it.
