I think one of the biggest problems is simply a lack of flexibility in these systems we're forced to interact with; like the simple and elegant solution Yahtzee mentioned in letting you craft equipment out of anything that fits broad categories, with particular stats depending on what exactly you used; it implies you CAN seek out very specific ingredients if you really want to, but you aren't forced to do everything in a very specific assumed order.

Deconstruction came up in the youtube comments, and that might be worth exploring further; taking stuff apart as well as putting it together. The construction systems in Satisfactory and Subnautica come to mind, where you can build structures instantly with Star Trek doodads and also take them apart into their component resources losslessly, so you drop down quick advance bases if you want and relocate entire buildings if you're crazy enough. (Like me) Satisfactory is basically an entire game made out of a crafting system as a central mechanic when you get down to it. There's an element at least implied even in Fallout games where you use weapons of the same or similar types to fix each other, implied you're basically taking apart both weapons to use the best (or least worn) bits from both and discarding the rest. And come to think of it I've done something like that with entire characters in RPGs with shared storage, taking the better lower-level equipment and giving it as hand-me-downs to newer character. The feeling of not wasting your previous time and effort is nice.

Love that the word-crafting system Yahtzee described here is basically just an advanced version of the kids' cartoon WordWorld. And I would play the crap out of it, because I thought on multiple occasions while my children watched that show that its mechanics could make one fine video game.

Bolting random bits together to make new weapons (and vehicles) is a big part of Tears of the Kingdom, so in some respects that's your Minecraft crafting evolution right there.

But seriously, I too have bit of a love/hate with crafting these days. It's abolutely like Yahtz says. A game where it allows you to be sure you have a weapon/armor that suits your style of play and so aren't (too) dependent on loot dropsor shops is kinda nice. But sometimes it gets weird. Like in older Far Cry when I needed to hunt shark or some damn thing to get a bigger fucking wallet.
