This series takes place 5-6 years after Yoda died. I agree with Ellie that Ahsoka is talking about Anakin. Technically, Ahsoka is no longer a Jedi because she had parted ways with the Jedi Order (shown in The Clone Wars). She is not responsible for every force-sensitive being and determined that Grogu has a connection to the Mandalorian and it must be him that continues to shepard him until an actual Jedi comes for him. Ahsoka has her own quest to follow.
