I dont care how soon or late they figure it out because they will eventually. And your right, I had to watch the show on my own 3 times before I even understood the story fully. Theres a lot of little details

I watched a lot of reactions to AOT, i honestly probably saw the entire show 10+ times and you girls are really really perceptive but it can still be very hard to connect the dots. You just never know where this show is going LOL

There is a lot going on in the show all at once and its COMPLETLY normal to miss details. I am sure you have gone back to the series and went "oh ya! i should have figured it out sooner" its about their own experience. I know i missed a whole bunch first time.

Also not entirely sure, but I feel like you missed Levi's last name when Kenny spoke after killing Merchant and you know one more person with that same last name. 3. But anyway, you might have already watched ep4&5. Buckle up, this season will tell you a lot of things, some you wanted answers to, some you wouldn't know you wanted answers to.

Regarding him being eaten, think back to the end of season 2. Ymir, the one she ate, the smart and the dumb titans. She wandered outside the walls for 60 years. End of season 2, Reiner called Eren the coordinate after he controlled the titans, now suddenly after they made it back the government freeze all scout activity and the military police capture Eren and Historia.
