i think chuck wanting to be a spy is very consistant with the show. think about it, every opportunity he had to stay out of it, he'd always find his way into the mission even when they didnt need/want him there. like in chuck vs the third dimension, casey and sarah gave him the night off, yet he chose to go with them bc he does like going on missions. i think what he doesnt like it the lying part. also at the end of season 2, chuck's dad tells him it isnt his fight anymore bc he no longer has the intersect, yet despite that chuck still wants to help and he goes with casey and sarah to rescue bryce. chuck has always been very insecure about who he is and what he wants to do for the rest of his life, now he has an opportunity to help people and really be considered a spy, really be respected, so i think that is why he went for it.
