As far as lack of sunlight turning you to stone, think about where all organic matter comes from. The sun’s energy grows plants which are eaten by plant eaters which are eaten by meat eaters. That energy allows plants to draw nutrients out of the ground and grow, allows animals to split their cells and grow from the inside. Everything that is alive is using energy that, ultimately, comes from the sun. So a creature drained of all sunlight is drained of all organic matter. It would be more realistic, of course, if it were just a pile of dust and water, but it makes just enough sense to keep that disbelief hanging up there.

Nice little fact - the writer of this story, Rona Munro, also wrote the final story of Classic Who, "Survival", way back in 1989. Since then she's become an award-winning writer of novels, stage plays and movie scripts. And yes, she deliberately set the story in Scotland as a treat for her fellow Scot Peter Capaldi. :)
