I remember playing J-Stars on my friends PS Vita back in the day and I definitely had a blast playing it at the time but I think the novelty of having a bunch of my favorite anime characters all in one game far outweighed my opinion on the actual quality of the game. I'd love to play it again now as an adult.

Fun fact but there's actually One Punch Man Fighting game and Saitama is in there as charactet. Like you said, it wouldn't make sense since he would just one shot everything. Well when he fights in this game he's obviously holding back but not only that, the funny part is that he actually has a health bar that decreases but he doesn't take any damage, instead when it goes to 0 Saitama goes like: "The bargain's almost over. There is J-Stars and Jump Force which are big crossover arena style fighting games between a ton of different Weekly Shonen Jump IPs. Those are about the closest thing to what you described though and they're not really great games either. On a similar note, there's also JoJo's Bizarre Adventure: All Star Battle R which is an arcade style fighting game and is a crossover between I think 50 or so characters from every part of Jojo's excluding the newest part 9. It's not without it's issues but if you're a Jojo's fan and enjoy aracde fighting games then it's pretty fun.
