just to kinda sum up everything we know and how it connects up until now
Subaru went to the mansion but ended up killed, most likely by Rem, who suspected him of being a spy for other royal candidates. After several respawns, he discovered the source of the danger: shamac, a curse that is transmitted through physical touch. The curse originated in the village where they are currently staying. Subaru faced the dual challenge of proving his trustworthiness to the mansion residents while managing the shamac threat. At the same time, he worked to mend his relationship with Emilia and protect the village. Now, they are actively confronting the shamac, and along the way, we’re also learning more about the twins, their backgrounds, and their unique abilities.
personally I don't think the pacing is right for the around 20 minutes per episode we get, which is why people prefer the directors cut edition. It'll get better tho

What’s funny is I actually dropped the show only a few episodes after this my first time watching because I didn’t jive with Subaru. Gave it another shot after my most trusted source effectively called it one of the best series he’d ever watched. Came to realize I disliked Subaru because he reminded me a lot of myself in my less proud days but that only let it hit me harder later in the series. Incredibly happy I picked it back up as it’s easily in my top 5 of all time now.

The feel the show had in the beginning will come back in a sense soon enough and I think it'll regain a bit of shine for you in that regard (it won't be without its frustrating moments, but those will be resolved satisfyingly)
This is my personal favorite series as I am heavily invested in the source material and I'd obviously hate to see it chopped, so if there's any specific questions you ever have feel free to shoot me a DM if floods of information comments ever feel a bit overwhelming.

As others have said, it's very detail dense. When characters are talking and not bantering with each other, every thing else they say is probably important to either the current plot, or future events. That being said, if you miss/forget something you might feel lost and unsure if it's because something hasn't been explained yet, or you should know but you just don't remember.
The first time Subaru tried to tell Emilia about Return by Death, he had the intense pain from feeling the hand grab his heart, but also Beatrice came into the room after Emilia left and told him that he now reeked even more of the Witch's scent.
From his experience the first time in the forest with Rem he realized the hounds are drawn to him because of how much he smells of the Witch, so figured it's gonna hurt but he can abuse the side effect of acting like he's gonna explain Return by Death to make himself reek of the Witch.
It worked great for the hounds, but also had the added effect of making Rem (who was already out of control in demon mode) aggressive towards him as well because as she's said she despises the Witch.

Re:Zero is very different in a largely good way. Some part can feel like theyre dragging, but it will pick up in the next few episodes. It's also an anime where you need to pay attention to what's going on, so I'd fully recommend rewinding to try understand anything that you feel isn't clear to you. Though the comments will help you out like Ster_arch_13 has done for this episode.
In general, i feel that anime based on novels such as Re:Zero tend to be much more information dense, because they've got source material which has the ability to use paragraphs of text to convey meaning.

Wooooo time for my weekly dose of Tony’s “Do you like my ru, my mothafuckin Subaru” lmao. Btw it’s gonna be a re-occurring thing so whenever Subaru tries to mention his curse the hand auto stops him and makes him smell like the witch, which makes all the monsters focus on him. I hope you stick with it cause there’s even better moments ahead, I can promise the story hasn’t forgotten about a single character, this arc is just focusing on this environment and cast. When you’re confused sometimes it might help to pause and talk about your thoughts so the show doesn’t just keep going and piling confusing stuff on you, maybe give yourself a chance to figure it out? Sorry if that suggestion doesn’t really help lol That trippy scene was him thinking about the voices he heard while he was recovering/barely conscious and piecing together that Rem had left by herself.

So basically what´s happening is that Subaru got gnawed on by a bunch of witchfiends (dogs) last episode. Their bites didn´t just injure him physically but also cursed him. The curse pretty much turns the person affected into a meal for the user and can be activated remotely. The only way to stop the curse from being activated is to kill the curse user(s), that being the metric shit ton of witchfiends that got a bite in, before they get hungry and decide to activate the curse. So Rem decided to walk into the forest by herself to kill all the dogs she can find in hopes that it´s the ones that cursed our boy.
Totally get it btw, the middle of this first season is a bit of a downer for most people, but it really does get a lot better in a couple episodes!
