Man I genuinely love Lt. Hughes. Man just loves his family and is just a big goof. But when he's talking about serious or important stuff you can hear the tone change in his voice and everything. I find it cool how dynamic he can get lmao.

Yup, this anime proves that being too faithful to the source material isn't always the best. These jokes work WAAAY better in the manga and in the original 2003 anime they're not that "in your face" as here (even the filler jokes were actually hilarious). I get you, but the series will get more serious with time and, oh boy, we're gonna learn that the hard way. And I'm saying all that while being an FMA fan for over 15 years now. I think I'm just too old for some of these gags. XD

There’s a few variations of it in the OST, but the waltz song you mention is called “Trisha’s Lullaby” - I think that’s consider the main version of it, with variations such as “Lullaby of Resembool” - the whole OST is great though.

I do feel like the various themes in this show are a part of the reason this show is still held in such high regard. Because it’s set in what feels like a turn of the century European setting, we get these great European feeling themes but designed by a Japanese composer. I still listen to them regularly all these years later.
