Enemy stand user can have a big unexpected ability that punishes you for that. What if they poison you on contact? What if they freeze you? What if the damage from them transfers to others, straight to you? There already were a situation where the group attacked Steely Dan before he attacked hem, and their damage dealt great damage to Joseph. Polnareff attacked Judgment upon seeing it - granted, in this case, it didn't turn into counter-attack against him. There's also stands like Yellow Temperance. When Jotaro attacked him, it left a bit of himself on his hand to grow and eat him. So, in conclusion, there's enough reasons for Crusaders to act less rush and aces the situation before wildly attacking, considering how unknown an enemy stand can be.
