Small point of order, she's a college professor, not a high school teacher. Thaddeus is currently enrolled at the university run by Emma Frost.

She might have the professional knowledge to be a high school biology professor, but she feels like she would behave like an impulsive teenager most other times. Understandable given her assumed amnesia. I don't think the first option would be in character. I think the third would be the most believable for her. She sounds like she let's her desires take the wheel more often than not.

But if she's lived a few years with her creator repeating the words " K̷i̷l̷l̷ ̷G̷o̷k̷u̷ Fuck Thaddeus" in her subconscious over and over, then I guess it makes sense she would just jump him immediately.
