BANANA BREAD
So! I thought I’d share my personal favorite banana bread recipe with you all! Since i mean i was a full time baker before I switch to full cosplay. I personally love banana bread and am super duper unhappy when it isn’t moist enough *sobs for all the dry banana bread in the world* the very first time I made this recipe I fell in love immediately and having been using this recipe at every baking job I’ve had ever since! The key to this is though that you gotta get your bananas like super duper ripe, like I’m talking no yellow left type ripe. Buttttt if that grosses you out or you aren’t patient you can always throw your bananas, in the peel, on to a baking sheet and bake them at 350 until they are black and juices are oozing out. And then let them cool and unpeel them to use them in your recipe!
So! Let’s get started!!!
Firstly your going to need your ingredients and your kitchen tools!
Ingredients:
1 C Room temperature Butter
1 ½ C Sugar
2 Eggs
1 Tbs Vanilla
3-4 Very ripe bananas
¼ ts Salt
1 ½ ts baking powder
1 ½ ts baking soda
2 ½ C Flour or gluten free flour
Extra flavor add ins could include:
1 C chocolate chips
1 sliced banana gently folded into the finished batter
1 C any type of preferred nut like walnut or pecan
½ Tbs of cinnamon
½ ts nutmeg
Kitchen tools:
Electric stand mixer or handheld
Baking pan can be either deep loaf pan or a bundt pan GREASED with nonstick spray of butter
Measuring cups
Directions:
- Preheat your oven to 350 F
- Cream together butter and sugar with your mixer (should take a few minutes, you want it like kind of fluffy. this will take longer and not be as fluffy if you use colder butter rather than room temp)
- Add eggs one at a time and mix until incorporated
- Add vanilla, mix
- Add 3 of the 4 bananas and mix until incorporated
- Add dry ingredients (you can mix all the dry ingredients in a bowl before hand if that makes you happy but I personally just don’t care to dirty another bowl when this works fine.)
- Add last banana and mix until everything combined smoothly
- Spray loaf pans with pam spray and scoop batter to fill ¾ way
- Bake for 45-1 hr until a nice rich brown color graces the top (check at 45 minutes with a wooden skewer or toothpick, insert into banana bread, if toothpick pulls out with crumbs attached you need more time)
- LET COOL for 30 minutes before slicing or removing from pan trust me your life will be easier if you let it sit, though i know how hard it will be to resist temptation.
