Oh, sneaky, that was well done! I think it's just that Luffy used to live in the village until he met Shanks at 7 or so and after that Garp brought him to Dadan's place, while Ace had been with the bandits since he was a baby, but his only contact to the village were Makino and the Mayor, who came up the mountain to visit Luffy every now and then. It's a really effective flashback, I got super attached to Sabo and Dadan and it made me understand Luffy so much better. What period did you mean though, when you said you wanted to see a bit more? Those seven years after Sabo? It's implied it was mostly the same as what we saw. Or after Luffy set out at 17? Coz you've seen all of that. Right after the Sea King he meets a whirlpool, loses his boat, but survives in the barrel, gets found by the Alvida pirates and meets Coby. ;)
