I think the best way to explain it is that his natural compassion for humans is gone because he isn't one. Most humans wouldn't go out of their way to kill ants but I doubt most would grief over killing one.

So it seems you missed a little thing from last episode: This is not the Game World, the terrain around the Tomb is completely different than what it was in game, the Countries did not exist in the game. Essentially, the whole place was taken and plopped in a completely different world. The thing of his emotions: He is still capable of feeling emotions, however, when they become too controlling/impacting him he is inhibited to his undead state. Something you should definitely bear in mind for next episode that will give a lot of context for you is the tier of magic he was using in this episode (The spell he used first against the human knight was a 9th tier spell, grasp heart.) And finally, you said about his spells? Most magic casters could learn up to a maximum amount of spells based on their class level, the average level 100 magic caster would have 300 spells to utilize, however, due to Ains' skill choice and character classes he was able to learn much more than that, he has over 700 spells that he can utilize.
