It’s the spell he casts in the previous episode and many times in the previous season where he turns the ground to mud. He got the nickname in the LN because he supports all the parties he joins by casting that spell making a huge difference in fights. And basically no other mage can cast multi-elemental magic. It’s earth and water magic at the same time... Quagmire is a word for the loose mud in a swamp.... So they pretty much are just calling him "The mud guy"
