Hej Jami here is an answer to your question about the language in vinland saga the reason that there wasn't made a change in it, is because the Vikings spoke Old Norse, but we don't know how they sounded. Old Norse has since developed into the modern North Germanic languages Icelandic, Faroese, Norwegian, Danish, and Swedish.
