If you're willing to watch an older anime, Akira could be a really good one to watch. Came out in the 80s I believe. Generally considered a huge influence on anime (and pop culture in general) and paving the way for anime to become popular in the west (outside of Japan). It's a movie so it wouldn't be a big time commitment. It's in the cyberpunk genre, actually kinda being one of the biggest influences on the Japanese cyberpunk genre moving forward after its release.
