This is a late comment but while the backstory fillers might be excessive it is common for long running animes to have longer recaps of important events that shows character feelings/motives that are connected to current events when it has been a long time since they were shown, and by this point the backstories were aired 4 to almost 6 years ago. I also think the time they gained by these weeks of filler were used to animate the big episodes of the arc with more care.

I definitely am one of those people who watch Onepiece and AOT that I don't really provide time to join live stream to hear about it. Also I noticed it was $7 usd on patron not $10 so yeah my math was def wrong in the discord server. It just sucks that canada have to pay much more when usd price gets higher in total

just wanna clarify kuzan didn't change his name to aokiji. all three marine admirals go by codenames along with their real names. aokiji wasn't an admiral in the flasback so everyone calls him kuzan aokiji's codename means "blue pheasant" in japanese

With those filler episodes you should definitely go back and check out the ending of them. After To Be Continued... on each episode there is a short called Straw Hat Theater. These are some of the funniest things in all of One Piece and need to be watched. You'll enjoy them.

For devil fruits, there are encyclopedias in their world that have many, but not all, of the devil fruits listed and shown. There is only one devil fruit of a kind at a time but when a person who has that power dies then a fruit of the same kind somewhere in the world turns into that devil fruit. For example, if Luffy were to die then somewhere in the world a melon would turn into the Gum Gum Fruit. This is how they are able to know what certain devil fruits are before eating them.

Since no one else has said it yet...the reason for that stretch of filler episodes is because One Piece changed timeslots in Japan. So the anime producer wanted to have 4-5 episodes to "recap" new viewers on the main characters arc. Also because of this time change we have longer opening songs and no longer have ending songs and this has lasted all the way to present day.

also for the record Aokiji is not actually Aokiji's name. it's just his title it means "Blue Pheasant" in japanese. His real name is Kuzan. All Admirals have titles like that. Also the guy who blew up the evacuation ship "Vice Admiral Sakazuki" is an important name that will come up later.
